6 easy summer recipes

The last thing we want in these hot summer days, when the heat sneaks into the kitchen, is to turn on the stove, but also to raise the °C in the room. Our favourite option is preparing in nature or in the oven, preparing salads and various smoothies and shakes. We promised that for our recipes you do not need to have special culinary skills or a victory in Masterchef. All you have to do is “scroll” and discover recipes for a healthy, tasty, colourful summer in your bowls, plates or glasses „ 😊

 

Well, let’s start with cucumber soup! And no, it’s not hot for the soup if you thought about it, because this one is really refreshing and made for warm summer evenings.

All you need are the following ingredients:

  • 1 large cucumber or 2 smaller ones
  • 1 ripe avocado
  • Half a cup of water or coconut milk
  • 1 clove of garlic
  • Half a lemon
  • 1 teaspoon of salt
  • 1 small pepper
  • A pinch of turmeric
  • A little parsley
  • A teaspoon of grated ginger

And now, the magic!

Preparation:

Put all the ingredients in a blender and in 3 minutes (until it becomes creamy) your soup is ready to cool 😊

When serving, add cherry tomatoes and a little sour cream on top (optional).

In just 10 minutes of preparation, you will be served a soup that even real masters in the kitchen would bow to!

Whether they are hot, cold, sweet, salty, roasted, breaded or roasted zucchinis are always a good choice. We present you a recipe for:

Roasted zucchini

Ingredients:

  • 3 larger zucchini
  • A little olive oil
  • 3 young onions
  • 180g grated cheese
  • Basil (if desired)
  • 2 eggs
  • 100ml cooking cream
  • Parsley
  • 3 cloves of garlic
  • Spoon bread crumbs
  • A pinch of grated nutmeg
  • Spices as desired

 

Preparation:

  1. Wash and slice the zucchini into thin strips or slices and salt them to release water.
  2. When the zucchini release the water, mix them with a mixture of chopped spring onions and basil and grated cheese.
  3. Coat the vessel with olive oil and place the zucchini inside
  4. Beat the eggs, add the cooking cream, chop the garlic, add the spices, nutmeg and bread crumbs and pour the mixture over the zucchini.
  5. Preheat the oven to 200 ° C and bake for 15 minutes
  6. After 15 minutes, add the remaining cheese on top and bake until golden
  7. Done!

Note: you can also replace zucchini with eggplant!

And now … are you ready for the most refreshing summer salad?

Ingredients:

  • Lettuce or lamb’s lettuce
  • Half a cup of walnuts or almonds
  • 1 medium apple (sweet or sour – optional)
  • Half a cup of rosehip seeds
  • Half a cup of boiled corn
  • 1 piece of cooked chicken or turkey breast chopped into small pieces

Mix all the ingredients well and pour over the dressing that you will prepare from:

  • 1/4 cup fresh orange juice
  • Half a lemon
  • 2 tablespoons olive oil
  • 2 chia seeds
  • 1 clove of garlic
  • Salt
  • Pepper

 

Combine all ingredients in a bowl and pour over salad. Have a nice meal!

There are a million ideas and recipes for delicious and healthy desserts. Instagram has become a real small culinary platform, so we found this eye-pleasing and taste buds pleasing recipe on it:

 

Ingredients:

 

  • Fresh cheese 500g
  • 2 cups of spelt flour
  • 2 eggs
  • A little bit of honey or agave syrup

Preparation:

Combine the ingredients and make the „balls“, which you will put in a preheated oven at 150 °C for 15 minutes.

When the time is up, serve „the balls“ with agave syrup, honey, homemade jam, blueberries or raspberries.

We tried the recipe and regretted it. Yes, you read that right. We regretted it because, for children, there are no more breakfasts without favourite „balls“.  They are so delicious that they deserve photography as well 🙂

While writing this article, we have become very thirsty. So the next one on the repertoire is the summer bomb in the glass.

Preparation:

  • 2 cups of diced watermelon
  • 1 cup strawberries
  • 1 apple
  • A few mint leaves and
  • A little lime juice

Put the ingredients in a blender, pour into a glass, garnish with a few mint leaves and refreshment is in front of you 😊

 

In the previous article, we discovered what fruits and vegetables you have in the summer offer. You can find all these products on the shelves of all major supermarkets in your city, and you can recognize quality ones by the well-known code! 😉 All you have to do is to put them in the basket and kitchen games can begin! The best thing is that all members of the family can participate!

If you ask us, we agree with that – more is less! So is there food that is more summery than grilled fish with mangold from a nearby garden?

Fish contains less connective tissue than meat, so it is softer and easier to digest, and does not fall hard on the stomach. However, today we are not going to talk about nutritional values, but we are getting to work!

Ingredients:

  • Fresh fish on request (we recommend Orada)
  • Garlic and parsley if desired
  • Olive oil
  • Mangold
  • Potato
  • Lemon
  • Rosemary (optional)
  • Salt and pepper
  • Grill master;)

 

Preparation:

  1. The grill should be well heated and oiled
  2. Fill the entrails of the fish (optional) with rosemary
  3. Bake the fish depending on the size, 3 to 5 minutes from each side. If you are preparing a larger fish, first bake it with raised grills to warm it up, and then gradually lower it to a lower level. The fish turns only once until the skin takes on a brown-golden colour and becomes crispy.
  4. For rhapsody of taste, during the baking, coat the fish with a sprig of rosemary previously soaked in quality olive oil

Note: grilled fish should not be kept for too long so as not to burn out and lose their juiciness!

When the fish is done, pour plenty of olive oil, parsley and garlic over it and serve with boiled mangold and potatoes.

Could it be better and simpler?

In our opinion, it can’t!

If you are not a fan of mangold, grilled vegetables are always a good alternative! But if you don’t buy organic products (and you should!), don’t forget to wash the vegetables from pesticides, before preparation! We are sure that you have heard about pesticides, and next time we will write about their harmful effects on human health and the environment.
